Orange peel, or orange zest, simply refers to colorful skin of
an orange used as an ingredient in cooking. Zest is
incorporated into food and drinks by scraping the skin away with a
peeler or similar kitchen tool. In order to ensure harmonious
and sweet flavor, the pith, or white area under the surface of the
skin, should not be included as part of the zest.

Culinary Uses of Orange Peel
While orange zest is used in various meat dishes, such as
ossobuco, it is more commonly used to flavor desserts, or
as a main ingredient. For example, a deliciously rich and
